Melting Coating
The melting time will vary with the kind of microwave and the mount of coating, so you must watch and check to determine what is best for you.

 

 

1. Place coating in microwave safe dish. Coating need not be broken up, but will melt faster if it is.
  2. Microwave at MEDIUM (50%) power for 15 seconds at a time.

3. When the coating looks wet, stop and stir it frequently. Coating does not lose its shape as it melts and must be stirred. Also, due to the way the microwave cooks and because of hot spots which occur in microwave ovens and glass containers, it is necessary to stir more frequently to prevent scorching.

4. When the coating has only a few small lumps remaining, remove it from the microwave and stir until all is melted.

5. Place pan of melted coating into a pan of lukewarm water and stir until thickened slightly, then pour into molds. Stir coating remaining in pan occasionally to keep temperature uniform throughout.

PROBLEMS AND CURES
Overheating will cause coating to thicken and possibly crumble. The grains also will become enlarged. Although this grainy texture of the coating will be gritty, the coating may be made usable by cooling the coating slightly and adding small amounts of Paramount Crystals. Sprinkle the crystals in a teaspoon at a time, stirring constantly until the desired consistency is reached.
Streaks, if your coating develops white streaks (bloom), it usually is caused by overheating, moisture or lack of stirring. Return to heat and re-melt with care.
Moisture also will cause coating to thicken, and become grainy. Moisture may be in the form of the wrong flavorings or colorings, steam, accidentally splashed droplets, or condensation from storing coating in the refrigerator or freezer. To try to make it usable add small amounts of Paramount Crystals …only if Paramount Crystals are absolutely not available a very small amount of odorless, vegetable cooking oil may be used to try to thin coating. (The addition of cooking oil will cause the coating to melt at a lower temperature.)
