Shortbread Recipe
1 cup unsalted butter, softened
2/3 cup powdered sugar
½ teaspoon vanilla
¼ teaspoon salt
2 cups flour

Cream butter and sugar, then add the vanilla. Mix the flour and salt into the creamed butter mixture. Knead the dough for a smooth texture. Roll the dough out into a cord the diameter of a quarter. (fig.2) Using a bench knife portion dough.

Roll into a ball and firmly press into the pan prick the back of the cookies to aid in the release of steam. (fig.3)

Bake 350ºF until golden. Remove cookies from warm pan and cool on cooling rack. (fig.4)
