Candy Coatings, Summer Coating, or Bark

Confectionery coating, also known as Summer Coating or Bark, should not be confused with real chocolate. Our confectionery coating chocolates have a rich chocolate flavor, velvety mouth feel, and may contain small amounts of cocoa butter or chocolate liquor, but they primarily contain other vegetable fats and cocoa for easier handling and faster set up. The colored confectionery coatings have a pleasant vanilla flavor and that same velvety melt-in-your mouth feel.

Confectionery coating is not as sensitive to the high humidity and temperatures of summer. Although coating can be shipped during summer, there may be melting enroute, this is normal and doesn't harm the product.

Confectionery coating does not contain wax; however, cheap confectionery coatings may have a waxy mouth feel due to the lower quality and higher melting point of the vegetable fats used.

Peter's Confectionery Coating
Peter's Confectionery Coating has a rich chocolatey flavor and an excellent mouth feel. Excellent for hand dipping, molding or eating as is. Peter's white vanilla flavored coating can also be colored with Candy Coat Color to meet your needs. Peter's Westchester and Eastchester are available in the same excellent quality in both wafer and block form. 2 1/2 lb. packages are packed in new small wafer form for easy melting, 5 and 10 lb. packages are block. 25 lb. cases are wafers. 50 lb. cases are block.
